Yup, that’s right, I made cookies today with veggies in them. And they are SO yummy. Think zucchini bread if you’ve had it. Sweet and moist.  My husband reluctantly ate one, then took 95% of them with him back to work for munchies for the rest of the day. Stinker….he says he’s sharing them with the guys. I can’t wait to hear what they think.

 These are what I call “cake” cookies. They are fluffy and spongy like cake but have the good stuff cookies have in them, like chocolate chips. Check ’em out!

Zucchini Cookies

1/2 cup butter, softened (1 stick)
1 cup sugar
1 egg, beaten (I used 1/4 cup egg beaters for healthyness….)
2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup grated fresh zucchini (about 1 small zucchini – i used a food processor)
1 cup raisins
1 cup chopped walnuts (i used big, fatty halved walnuts)
1 cup dark chocolate chips (cause milk chocolate is BLAH)

preheat oven to 350 F, coat baking sheets with nonstick spray or use parchment paper for easy clean up

In lg bowl, cream together butter and sugar until light and fluffy. Gradually add the egg, flour, baking soda, cinnamon and salt; mix well. [I added everything into the food processor since it was already dirty from the zucchini. the batter is very heavy and dense]

Stir in the zucchini – this will add moisture. Add raisins, walnuts and dark chips and stir.

Drop by spoonfuls 2 inches apart onto the cookie sheets.

bake for 15-20 minutes or until golden – don’t overbake!

  1. Tiff – I made these a couple of times shortly after you posted this, and really liked them. Made them again tonight, not sure how they would go over with the guys – everyone thought they were awesome! Thanks for sharing this recipe and making it easy for me to get some zucchini into my kids 🙂
