Coop and I dropped Jer off at Ft. Lewis this morning at 6:30 am. When we came home, we made ourselves feel better by making blueberry pancakes. Here is the super yummy recipe for your dining pleasure.
2 cups flour
1/2 tsp salt
2 TB sugar (i upped it a tad…by 1 TB)
4 TB baking powder (seems like a lot, but blueberries are heavy)
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 cups milk
2 1/2 cups blueberries
Mix flour, salt, sugar, baking powder, cinnamon and nutmeg in lg bowl.
Beat eggs and milk slightly, then combine with dry mixture.
(Adjust amount of milk by how thick or thin you like your cakes)
Mix until smooth; pour in blueberries.
Pour by 1/4 cup onto hot griddle
(if you like your cakes a little crispy, use butter before you drop the batter in the pan)
Makes about 20 cakes
